About this experience
In 1999 the Texas legislature passed a resolution naming Lockhart the Barbecue Capital of Texas. The town has taken it seriously ever since, and the rivalry between its pits is genuine, generational and slightly unhinged.
We drive thirty-five minutes south, eat at three of them in one afternoon — meat by the pound on butcher paper, no forks, no sauce, do not ask — and let you decide which side you are on. Between stops there is the 1894 courthouse, which is the most beautiful building in the county and nobody photographs it.
You will not need dinner.

Worth every cent
